Workshop program

Kiama Municipal Council facilitates a range of workshops throughout the year. These workshops have been established based on the community need and demand. To enquire about a workshop or make a booking to attend a workshop, please e-mail council@kiama.nsw.gov.au or visit the Kiamasphere website.


Cheese workshop

The Cheese workshop is Council’s most popular workshop and sessions are scheduled throughout the year. Participants learn the steps involved in making cheese and have a choice of 2 workshops:

  • Haloumi, Yoghurt and Quarg
  • Fetta, Ricotta and Mascarpone

Workshops cost $30 per person and bookings are essential as there is a limit of 10 participants per workshop. Workshops are conducted North Kiama Community Centre, The Pavilion Kiama and Gerringong Town Hall.

Vegetarian Cooking

This is a fun and informative workshop where participants learn about what foods are best enjoyed to ensure a healthy vegetarian lifestyle. During the workshop, the group will prepare delicious vegetarian meals and enjoy them together. This workshop is facilitated by experienced local chef and cooking demonstrator Adam Guthrie from ‘I Feel Good’. Vegetarian Cooking workshops costs $30 per participant. Sessions are scheduled throughout the year and are usually held at The Pavilion Kiama.

Pickling and Preserving

The Pickling and Preserving Workshop allows participants to learn basic techniques for turning fresh fruit into preserves. The workshop is free of charge and bookings are essential.

Here is just a sample of some of the recipes from the workshop.


Plum and Apple Jam

Ingredients
500gms apples peeled, cored and sliced
500gms plums halved and stoned
Squeeze lemon juice
150 mls water
1kg sugar


Method

  1. Bring plums, apples, lemon juice and water to the boil.  Reduce heat and simmer until soft (20 minutes approx)
  2. Add sugar and stir until dissolved
  3. Boil rapidly until setting point is reached.
  4. Skim then bottle in sterilized jars.

Preserved Lemons (recipe from Stephanie Alexanders ‘The Cooks Companion’)

Ingredients
250gms coarse salt
10 lemons scrubbed and quartered
1 bay leaf
3 cloves
Small piece cinnamon stick


Method

  1. Sprinkle 1 tablespoon salt into a sterilized jar.
  2. Mix lemons and salt well. Use plastic or glass bowl.
  3. Pack lemons into jar skin side out pressing down to release some juice.
  4. Slip spices into the middle as you pack.
  5. Top the jar up with extra lemon juice so all fruit is covered.
  6. Seal jar and store in a cool place (not refrigerator) for 1 month before using.

This workshop is for both newcomers to backyard chooks as well as current chook owners. It is aimed at encouraging good health and well-being for poultry and consequently for the family eating the eggs. Backyard Chook Keeping is a 5 hour workshop and covers a range of topics such as:

  • Housing
  • Predator Proofing
  • Nutrition
  • Breeds
  • Diseases and Preventative Medicine

This workshop is free of charge however bookings are essential as places are limited.

This 2 hour workshop is an introductory workshop for those wanting to start a backyard veggie patch using the No Dig method. Instead of working and breaking up soil, this method relies on encouraging organisms living in the soil to do all the work. This workshop is free of charge however bookings are essential as places are limited.

This hands on and practical workshop builds on from the No Dig Gardening workshop and allows participants to learn about organic gardening principles, building and maintaining your own veggie patch. This workshop is free of charge however bookings are essential as places are limited.


Introduction to Permaculture

Permaculture is about conscious, sustainable design - using three basic ethics of 'earth care', 'people care', and 'fair share' to create productive, healthy environments for all living beings.

This 2 day workshop provides an inspiring introduction to Permaculture, covering the theory, principles, and design skills required to transform and maintain suburban and urban landscapes.
